The quality of the vineyards, their rigorous management and vinification have established the Domaine des Perdrix as a renowned Domaine, one of the best among the "Grands Vins de Bourgogne".
Le Domaine des Perdrix has been on top of numerous blind tastings: best Pinot Noir of the World, best Echézeaux, best Nuits-Saint-Georges... (see our rewards section)
Elaboration
A consistent and demanding approach to product quality is applied to all processes linked to vinification and wine ageing.
The team shows the highest rigour and brings an extreme attention for details, to the vines, the vinification and the ageing of the wines.
We know what taking risk means at Domaine des Perdrix: waiting for the optimal maturity, which is reached when the pips crunch under the teeth and have lost all their bitterness.
The grapes are harvested manually, then sorted out before going in vats, in order to eliminate the unmature and damaged ones. Vatting is long and divided into three steps:
pre-fermenting maceration, maceration, post-fermenting maceration. The wines are then aged mostly in oak barrels (around 18 months), of wich a quarter is changed every year.
Wines are bottled when they are on their fruit and flower primary aromas.
History
12 hectares spread within the best terroirs of Côte de Nuits
This domaine extends over 30 acres in the great terroirs of : Vosne-Romanée, Nuits-Saint-Georges, Nuits-Saint Georges Premier Cru "Aux perdrix" (which is owned in quasi monopoly, as the Doamine owns 99% of this great vineyard) and Echézeaux Grand Cru (situated in "Echézeaux du dessus", right in the centre of this prestigious vineyard).
More than half of our vineyards, are Premiers Crus and Grand Crus.
Domaine des Perdrix was taken over in 1996 by Devillard's family, wine's men and women, for 5 generations. All vineyards were in perfect condition. High investments have been realized in the Cuverie, in order to take advantage of the present techniques:
Most of the domaine's production was first sold to a trade firm, with the result that the Domaine was not well-known.
Which has allowed Robert Parker to say that, even in the great terroirs of Côte de Nuits, you could still discover great quality wines.
The Vine
High quality wines can only be made from high quality grape fruit
Just as for high gastronomy, you can only produce great wines with very good grapes.
We like to mention that the terroir notion, which is the soil, the subsoil and the microclimate union, reaches its extreme refinement and subtlety in Burgundy.
All over the world, the greatest wine critics have said it: Burgundy is complicated and the grape variety Pinot Noir is hard to please. Nevertheless, they all appreciate the emotions the Grands Vins de Bourgogne bring them. Such a quality can only be achieved through a philosophy of wine production based on meticulous attention to vineyards, small yields and optimal ripening of grapes, the philosophy applied by our wine estate. Domaine des Perdrix spreads over 12 hectares. The average age of our vineyards is 35 years.

From A6 motorway and Chalon sur Saône :
Get out at Chalon Nord exit. Then,follow the D978 road, Autun direction. Carry straight on to Mercurey.
After the Mercurey village road sign, turn first road on the left: C3 road, Touches / Chamirey direction. Straight on then turn left at the crow's feet (leave the bowl field on your right).
Straight on till the Château de Chamirey.
From Beaune :
Follow the D74 road then the N6 road, Chalon sur Saône direction.
At Chagny, take the D981 road, Cluny direction. At the Côte Chalonnaise roundabout, turn righton to Mercurey.
After the Mercurey village road sign, turn first road on the left: C3 road, Touches / Chamirey direction. Straight on then turn left at the crow's feet (leave the bowl field on your right).
Straight on till the Château de Chamirey.
